Since its inception, Miyazaki has established a cult following. Calling ahead is probably wise to secure a table—although the restaurant does not accept reservations on weekends. The success of the restaurant is likely due to the combination of solid operational control and culinary prowess—the result of a partnership between Susan Cuenca, whose first restaurant, Un Cuenca, is a staple in Molito, and Chef Kondo-san, the quiet and efficient Japanese executive chef of the restaurant. Susan’s close attention to detail and devotion to the success of her restaurant are an excellent complement to Chef Kondo-san’s dexterity in the kitchen—evidenced by his discreet and resolute management of a large team of chefs. Together, Susan and Kondo-san orchestrate the team of servers and cooks to bring a wide culinary range of authentic Japanese favorites to each table—favorites including tempura; fresh sushi and sashimi; ramen and udon both cold and hot, dry and in soup form; teppanyaki featuring prime cuts from Japan and the USA; and a delectable array of gyoza. All these are best washed down with Miyazaki’s stellar collection of smooth sake and Japanese whiskies. Miyazaki is definitely a staple in the Alabang culinary scene!
